We found our Weber 721001 online for about $269; and it shipped extremely fast with the “Super Saver” free shipping. As with most Weber products, assembly took less than 20 minutes from unpacking to a finished, ready to use charcoal smoker; unlike other smokers we have reviewed, the assembly instructions with this Weber charcoal smoker were clear, straightforward, and impossible to misunderstand. And once assembled, the Weber 721001 was sturdy, yet stable; even on the uneven concrete patio pad that we set it up on.

The Weber 721001 Charcoal Smoker Is Designed for Novice Smokers

What we really liked about this Weber 721001 is that it is extremely easy to use; especially for people new to using a charcoal smoker. It is easy to load charcoal and water (both initially and while cooking), you have accurate internal temperature control maintained easily by adjusting the airflow vents in both the lid and the bowl, and the smoker is very easy to clean since the nickel plated grates allow any attached food to be brushed away with a grill brush. And smoking with this Weber charcoal smoker is almost “hands off”. Once you get the temperature where you want it, you can literally walk away from it for three or four hours. You are not constantly checking the smoker every half hour to insure even temperature control.

The Weber 721001 Charcoal Smoker Improvements

There are a couple of new improvements on the Weber 721001 over the older model we reviewed that we really liked. First off, they added a wider, spring loaded side door which makes it infinitely easier to add additional charcoal and water. And the included ash pan keeps the charcoal remnants off the cement of the patio. The nylon handle on the top of the smoker actually stays cool to the touch, and the thermometer on the lid is actually pretty accurate; which is unusual on most charcoal smokers. The porcelain enameled steel construction makes this a rock solid unit; but you will have to “season” this smoker once or twice to really get the flavor of the smoked charcoal into your food. Seasoning this smoker is nothing more than firing it up once or twice for a couple of hours with a full load of flavored briquettes to burn off any manufacturing residue and heat temper the cooking grates. But once seasoned, you will find that this Weber 721001 not only gives you great smoked meat and poultry; but it has enough internal room to fit as much as you’d like to smoke. With 684 square inches of cooking surface, we have done a full turkey along with ribs at the same time, and still had room to spare. And as you use this smoker over time, you will discover that the lid creates a great seal; hardly any smoke escapes which is nice if you want to enjoy your patio while the Weber 721001 is working.
